So, my phone still can't be validated as "they can't log me in" somehow. There's no way of fixing this myself (via the app or a website) and calling them or sending an email doesn't help as they just told me to send an email and they don't respond to my email. Does anyone have an idea how I can get out of this cycle of frustration and get the app running again?

It's not a great answer - as this shouldn't be the case - but it can take 3-5 days before they respond to emails. Then, if it's your first interaction, they'll want to do an ID check with VIN/Reg plate to confirm you as owner. From that point, it can still take a few days to respond to requests. Unfortunately, they can only do 2FA via email and there's no automated method in place yet for you to do this self-service. Yes, from day one (Sept 24th) But sometimes Honda has issues (server related?).
I did a reboot and also loged out. So I'm up and running again for the moment.
